Sausage and bean soup

 

Ingredients

 

4 sausages

1 pepper (any colour but red does disappear amongst the tomatoes)

1 onion

1 400g tin tomatoes (chopped)

1 400g tin beans (red kidney,  etc...)

1 pinch salt

1 teaspoon black pepper

1 tablespoon chopped sage

1 tablespoon chopped basil

l teaspoon sugar

1 generous dollop tomato puree

Oil for frying

 

Method

 

Cut the sausages into small pieces, chop onion, deseed pepper and cut into small strips. Put into a saucepan with a little oil and fry over a low heat stirring until the vegetables are softened and the sausage pieces are browning. Add tomatoes, salt, pepper, basil, sage, sugar and puree. Stir together and simmer for a minute then add beans. Stir and simmer for 5-6 minutes.  Taste to adjust seasoning and serve.

 

4 cups or 2 hearty bowls
